Why honey stores so well

Honey’s low water activity, acidity, and natural production of small amounts of hydrogen peroxide make it difficult for most microorganisms to grow.

Crystallization does not mean honey has spoiled. Gentle warming can return it to a liquid state without materially changing its quality.

Storage

A sealed container at room temperature is normally sufficient. Refrigeration accelerates crystallization and is unnecessary.
